Ingredients

For the Apples

  • 6 cinnamon sticks
  • 1 cup unsweetened apple cider
  • Rum and raisin ice cream, as optional topping
  • 2 tablespoons cold butter, cut into small cubes
  • 6 firm, tart apples of medium size, Rome or Granny Smith or similar, washed and cored

For the Glaze

  • 6 whole cloves
  • 1/2 cup dark rum
  • 1/2 teaspoon salt
  • 1/2 cup dark brown sugar

Quick and Easy Apple Turnover Recipe

Ingredients

  • 1 teaspoon grated orange zest
  • 3 tablespoons freshly squeezed orange juice
  • 1 1/4 pounds (600 g) Empire or Granny Smith apples, or similar tart varieties (3 large apples)
  • 3 tablespoons dried cherries
  • 3 tablespoons sugar, plus extra for serving
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • Pinch salt
  • 1 package (2 sheets) frozen commercial puff pastry, thawed
  • 1 egg beaten with 1 tablespoon water, used as an egg wash for finishing

Method

Preheat the oven to 400 degrees F (200 degrees C). Mix the orange zest with the squeezed orange juice in a bowl. Peel, the apples, cut into quarters. Remove the cores and then dice the slices. Immediately toss the apples with the orange juice to stop the cut apple surfaces from browning. Add the sugar, flour, cherries, cinnamon, nutmeg and salt to the bowl and mix through the apples to coat. Flour your board or bench-top and place the puff pastry squares on top. Lightly roll the squares and then cut each sheet into quarters. Brush along the edge of each of the small pastry squares with egg wash. Then, add about about 1/3 cup (4 Tablespoons) of the apple mixture onto one side of each square. Fold the pastry over the apple mixture, diagonally. Seal each turnover using a fork to squash the edges together. Transfer the turnovers to a sheet pan, greased and lined with parchment paper. Brush the top of each turnover with egg wash, add a sprinkle sugar. Use a knife to make 2 small slits in each turnover, and bake for about 20-30 minutes until puffed and browned.
