Quick and Easy, Delicious Breakfast

Breakfast is said to be the most important meal of the day, but for most people, mornings are one of the busiest times of the day. We don’t always have time to cook a big healthy breakfast, much less take it with us when we are on the run. Here is where the breakfast burrito comes in to save the day! When I started taking pictures for this hub, I had three breakfast burritos here, now one of my breakfast burritos has disappeared, what's up with that ... hubby!

Cook Time

Prep time: 10 min
Cook time: 15 min
Ready in: 25 min
Yields: 3 large breakfast burritos

Breakfast Burrito Ingredients

Ingredients

  • 3 flour tortillas
  • 3 eggs
  • 3 strips bacon
  • 1 small potato, grated
  • 1/4 cup milk
  • 1 cup cheese, grated
  • 3 tablespoons picante sauce, salsa
  • to taste pickled jalapeno slices, chopped
  • 3 tablespoons sour cream

  1. Cook your bacon in a pan until just crisp. Saving the bacon grease in your pan. Place bacon on paper towel and place another on top and press it onto the bacon to remove most of the grease.
  2. Fry the grated potato in the bacon drippings until crisp, turning once, creating hash browns. When they are done, drain on paper towel as well.
  3. Pour most of the remaining grease out of the pan and place the potatoes back in the pan on medium heat. Sprinkle in the jalapenos.
  4. Crack your eggs into small bowl and add milk. Mix well and pour over the potatoes in the skillet. Cook until eggs are done. Salt and pepper to taste.
  5. Spread one table spoon of sour cream on each tortilla, then add 1/3rd of the egg mixture, a strip of bacon and top with 1/3rd of the cheese and picante sauce.
  6. Wrap each burrito in damp paper towel and place in microwave for about 30 seconds to soften tortilla and melt the cheese.

Create Your Own Special Breakfast Burrito

Breakfast burritos can be made with a variety of meats, vegetables and cheeses. I have found that adding the hash browns to the eggs, gives it a different taste. Often, I will cook scrambled eggs and mix the hash browns with them for a different flavor. You can also use frozen hash browns. Add jalapenos to your taste, or leave them out all together. By cooking the jalapenos with the hash browns, it takes away some of the heat. You can also add chopped tomato, but I prefer using the mild picante sauce. We usually use our own homemade picante sauce, but my kids have eaten it all! I have found that the Medium Pace Chunky Salsa is very close to our own. You could also add a couple of thin slices of avacado.

I hope you enjoy making my Breakfast Burrito as much I have enjoyed sharing it!

Thank you moonlake. This doesn't exactly fall in "quick and easy", but I have started placing the finished burrito back in the skillet with just a little butter and grilling it for just a few seconds on both sides. I think it really improves it. Thank you for the pin and tweet! You are a good friend! :)

Hello Solaras! I'm glad you are going to try my breakfast burrito supreme. I think you will really enjoy it. When you make the hash browns, brown them well and they will not get soggy when you mix them with the eggs. It has a wonderful flavor and texture. Thank you so much for stopping by and commenting! Hello Angelo! They are good and I love that you can eat them "on the go"! Of course, you can change them up as you please adding to leaving out ingredients. I recently "toasted" my completed burrito in the skillet and it was even better! You might give that a try. Thank you for stopping in, commenting and of course the votes and share! It is always appreciated! Have a wonderful day! :)

Hi bridalletter! You can change up the recipe and make a little easier still. Leave out the potatoes, scrambled eggs and a little grated cheese, with some bacon cook up quickly. Add some picante sauce and a little sour cream, yummy! I recently "toasted" my burrito in the skillet and it is even better! I hope you enjoy! Thank you for stopping in and commenting, it is always appreciated! Have a wonderful day! :)

Hello Blond Logic! I used to buy a breakfast burrito at a local drive in on my way to work. Then one day I decided I could make them myself and do a better job! I agree, much better than a sugery breakfast cereal and you can eat it on the go. I recently "toasted" my burrito, after completion, in the skillet and it is even better! Thank you for stopping by and commnenting, it is always appreciated! Have a wonderful day! :)

Thank you Peggy! I'm so glad you tried my breakfast burrito and like it! Yes, broken up sausage is excellent too. I have to say that I "toasted" my breakfast burrito in the skillet the other day and it was even better! I may add that to my recipe soon. Thank you for letting me know you gave it a try, and for the share! I really appreciate it! Have a wonderful day!!! :)

We often want those for breakfast at home, but I don't like the taste of the frozen ones. It is nice to find the perfect recipe! I will try it out this weekend. Thank you for sharing.

I had never had these before my sister made them when I visited The States. I think it is a great way to start the day, much better than a sugary breakfast cereal. I will have to make some soon. Thanks for reminding me about this.

Hi Sheila,

Came back to say that I have now tried your breakfast burrito with the addition of the potatoes and it is good. Broken up breakfast sausage is also good in place of the bacon. Will share!

Hello au fait! I do go through hubs when I am looking for something different to cook for supper. There are so many good cooks here! I have the same trouble with jalapenos, but sometimes I just have to suffer through it! Thank you for ALL your support, it is always greatly appreciated! Have a wonderful day!!!

I'm on a recipe finding tour of Hubpages right now because it's lunchtime and I'm starving! This looks so yummy! I'll have to go easy on the bacon and the jalepeño, though. I like them but they aren't that fond of me. I like your idea of designing your own burrito too. This is great because it's so versatile, something new (to me anyway), and both easy and quick.

Voted Up, BAUI, gave you a star, and will share!

A wonderful recipe hub! I am always willing to try new foods and enjoy them. This is one recipe that I wanted to add to my regular breakfast menu. Your instructions are clear. Here in my country, we did not eat pig-meat, so I go for chicken instead of bacon. The first photo looks so inviting! Well-done!

Thanks for SHARING. Useful & Awesome. Voted up & pinned

Hello moonlake! I really like McDonalds sausage burritos too, don't tell anyone! :) Of course, you can make these with sausage, bacon or ham. Hubby prefers bacon, so that is what I usually make them with. Home-made is always better! Thank you for stopping in, commenting and voting. I always enjoy hearing from you! Have a wonderful day! :)
