Quick and Easy Couscous and Feta Salad
Cous Cous is so easy to make and so quick too, I love the fact theres no boiling or steaming. You can just pop it in a bowl, pop on some boiling water and leave for ten minutes. To add a bit of extra flavour to Cous Cous add some stock to the boiling water.Done!
Cous Cous goes with some many other ingredients and is a traditional addition to North African food, often with a stew added on to it.
The ease with which you can cook it means it makes a great lunch box dish or fill it out more and have it as a dinner salad. Here I have added some tangy feta to it, combined it with feta's best friend avocado and then heated it up a bit with a good dose of chilli.
- 200g dried cous cous
- 80g Feta, Crumbled
- 1 Avocado, Sliced
- 450ml Vegetable Stock
- 1 Red Pepper, Chopped
- 1 Red Chilli, Chopped
- Handful Sunflower seeds
- Add boiling water to stock
- Add stock to cous cous and then cover and leave for 10 minutes
- Once Cous Cous is 'cooked', fluff with a fork, add in pepper, chilli, avocado, feta, petit pois, sunflower seeds and season.
- Serve - Enjoy!
