Quick Shepherd's Pie
Okay, if you've never tried Shepherd's Pie, YOU don't know what you're missing! Give this a try (tonight) and let me know what you think. The first time I ever even heard of this dish was on my honeymoon in Nassau, where my husband and I dined at the Green Shutters Inn. Food was great, and I made a mental note of the ingredients so I could attempt to make it at home. Well, I've perfected it (at least that's what I'm told), and I'm going to share it with you:
- 1 lb. ground beef
- 1 pkg. Lipton's onion soup mix
- 1 can beef (or chicken) broth
- Flour (about 1/4 Cup)
- Mashed potatoes (about 2 Cups) - homemade or store bought will work
- Shredded cheese
Brown crumbled ground beef in frying pan. Do not drain fat. Add enough flour to the fat in pan to make a nice roux (or paste). Be sure to work out all the lumps. To this, add the onion soup mix and beef broth. Cook over medium high heat, stirring frequently to keep from sticking. Continue cooking unti mixture comes to a boil and thickens. Add salt and pepper to taste.
Preheat oven to 350 degrees. Pour meat mixture into casserole dish and top with mashed potatoes (just like icing the top of a cake). Scatter shredded cheese over the top (as much as you want) and bake until the cheese is fully melted and the casserole is hot and bubbly.
Enjoy with a salad and good loaf of bread. Include an ice cold beer and you'll be in heaven!
