Insalata Caprese Skewers

Are you looking for a great party appetizer for your next get together. These simple appetizers take the healthy caprese salad (generally a salad made of tomato, mozarrella cheese, some basil, olive oil, and balsamic vinegar) and give you a portable and tasty dish to pass around at your next party.

Ingredients:

baby tomatoes

small mozarella cheese balls

medium spinach leaves

salt and pepper

balsamic vinegarette

olive oil


Peparing and presenting your insalata caprese appetizers

Take the medium spinach leave and poke through the bottom quarter (holding it horizontal to you, so you get the longer part of the spinach leave to "hug" the other ingredients) with a skewer, toothpick, or a drink sword.

Next add the baby mozarella cheese ball (you could also use sliced mozarella, but I think it looks better this way...), and baby tomato. Then take the top quarter of the already skewered spinach and wrap the cheese and tomato. If you can't quite understand the process, looking up at the picture should help...

Finish off these appetizers by placing in a nice serving dish and add splashing balsamic vinegarette (or balsamic vinegar, if it is doesn't have to much of a bite...), olive oil, and a sprinkle of salt and pepper.


It's quick, easy, and it looks really great... So feel free to try these at your next party!
