Quick and Easy Yam Bake Casserole
This is a good Thanksgiving recipe. The combination of yams and pineapple is very tasty. I am less a fan of marshmallows on top of the potatoes, but I have included them because they were in the original recipe. I hope you like the recipe.
Recipe serves 8
40 ounce can yams
2 tablespoons melted butter
8 1/2 ounce can crushed pineapple
3 tablespoons chopped pecans or walnuts
2 tablespoons brown sugar
3/4 cup miniature marshmallows
Preheat oven to 350 degrees. Use cooking spray to coat 1 1/2 quart baking dish.
Drain yams, then mash them.
Drain pineapple, reserve the juice.
Add pineapple juice, melted butter and sugar to the yams.
Beat well then stir in pineapple and nuts.
Place in pan, bake for 20 minutes, then cover with marshmallows and bake 10 minutes more.
