Quick and Healthy Tomato Basil Pasta Recipe
When I want a quick and healthy meal for my family, I always choose this satisfying dish. It is full of flavor and only takes under 30 minutes from pan to plate. My recipe is approximate and I vary it every time. Normally when I cook, I do everything by taste.I am careful not to overcook the tomatoes and basil, if they get too soft your meal will loose its texture.
The following is the list of ingredients and approximate amounts. Enjoy!
· 3 large Roma tomatoes chopped
· ½ to ¾ cup fresh chopped Basil
· 2 cloves fresh chopped Garlic
· Salt and Pepper to taste
· Olive oil
1 Pound organic Angel Hair pasta cooked
Optional Add half of an large eggplant cubed
Add Two or three skinless boneless chicken breast, cooked and cubed·
First, heat the water for your pasta. Then in a large skillet, sauté tomatoes, basil and garlic in a little olive oil and butter if you like ( I usually start the pasta now). Sauté until tomatoes soften and basil and garlic are fragrant. This is when I add the cooked and drained pasta to my saute pan and lightly warm all ingredients together.
If you choose you can add the cooked chicken now too. Then I salt and pepper to taste, and you’re ready to serve! Just two pans, which makes for an easy clean up. Some like to add Parmesan on top. Add some bread and your family will love it. Surprisingly, this meal is good to keep for leftovers. I keep it in a container or seal-able bag in the refrigerator and the flavor is still good. It makes for a good lunch the next day.
