Raw Vegan African Cauliflower Soup

Are you just going raw? Or, have you been raw for a while Even if you are not a raw vegan you will love this soup. It is healthy, delicious and very satisfying, so it is perfect for those days when you feel like you need to eat some comfort food.

Prep: 10 minutes Serves: 4

Here is what you need:

1 cup jicama, peeled and diced

2 cupss cauliflower, chopped

1 cup tomatoes, diced

½ cup cucumber, peeled and chopped

½ cup sweet onions, diced

2 tablespoons olive oil

1 teaspoon cumin

½ teaspoon cinnamon

2 tablespoons lemon juice

½ cup avocado, chopped

1 cup water

½ teaspooon salt

1/3 tablespoon fresh ginger

3 tablespoons fresh cilantro

Instructions

1. Set aside ¼ cup jicama and ½ cup cauliflower to add at the end. This will give your soup a chunky, satisfying texture.

2. Blend the rest of the ingredients together until smooth in a blender or food processor. You will find that the avocado will give the soup a creamy texture.

3. Pour the soup into bowls and add decorate with caulflower and jicama pieces.

Just checked ingredients. Didn't know what jicama was. No chance of getting jicama in Limousin. What could I use instead?

Thanks for checking in, well jicama can be hard to get hold of. I cant really get hold of it here in the UK but a friend of mine is a chef and she gets them for me I dont even know where she gets them from because they do not sell them here. Well, I have been told that turnip is good to try but it can be bitter so maybe you can try out parsnip or white sweet potato.
