Raw Vegan Vegetable Soup

If you are a raw vegan and you love fresh vegetable soup. This soup is perfect for you, it is fresh, healthy and delicous. It contains paprika which is a spice made from dried bell peppers. It contains plenty of vitamin C and antioxidants. It is a beautiful bright, vibrant colour which is great if you like your food to like visually appealing.

Here is what you need

Ingredients

¾ cup tomatoes, chopped

1 cup celery hearts, chopped

1 cup cucumber, chopped

½ cup red bell pepper, chopped

1/cup avocado, chopped

4 tablespoons lemon juice

1 cup spinach

½ teaspoon salt

¼ teaspoon cayenne pepper

¼ cup water as needed

1 tespoon paprika

Instructions

1. Put the tomatoes, celery, cucmber, red bell pepper, avocado and lemon juice into a good quality blender. Blend everything together for about 30 seconds until smooth but still a little bit chunky.

2. Add the spinach, salt, cayenne pepper and water to the blender. Blend everything together utnil smooth and serve. Garnish your soup with paprika to give it a pretty look.

Dam that looks tasty, I love peppers as well, I think this is a winner, its also vegetarian which is good, most people don't get enough, including me, although I am a massive fan of peppers, definitely need to give this one a try
