Have you ever heard the old saying, "Real men don't eat quiche?" Yeah!, Me too! A long time ago that saying was all over the place. Let me tell you this though guys: REAL MEN DO EAT QUICHE! I think it all started back about twenty years or more ago with a book that was called "Real Men Don't Eat Quiche." Now, don't ask me if I have ever read it because the answer would be NO! "Real Men Don't Eat Quiche" was one of those phrases that defined the whole MACHO thing of the eighties along with so many other catch phrases from so many other movies like Terminator and others.
When I was younger, yeah! I went along with the hype. I was a macho high school bully and varsity wrestler and I wasn't going to eat quiche cause real men didn't do that! I just thought that quiche was some kind hanky up the sleeve French whoosywhatchamacallit entree. Heck! I didn't even know what an entree' was in the eighties. Now, nearly thirty years later I can tell people that quiche is really a tasty dish and that they are easy to make, and can be made out of anything including the kitchen sink. Yes!, Thirty years later and the truth has come out: Real Men Do Eat Quiche! I promise you that once you learn to make quiche you will be a convert like me. Trust you me making quiche really rocks when you have so many leftovers and you don't know what to do with them!

As I stated before there are two kinds of quiche you can make the one with the pastry shell and the crustless quiche recipe. I really like to cook the crustless quiche variety because it saves me from having to make a traditional French style pastry dough which needs butter and in many cases shortening. I don't need the calories or the cholesterol or the extra mess in my kitchen mixing flour and butter and eggs and all the other stuff needed to make the pastry dough. The ingredients that you choose to make your quiche with will add depth and texture to dish and there are many ways to make a custard to pour over your ingredients. The easiest being heavy cream, eggs and some cheese and away you go! I like to use a standard Bechamel sauce as a quiche filling at times.
