Really Easy Icecream
This is a really simple, 5 minute recipe for ice cream that tastes so much better than the stuff from the stores. It has no preservatives and is packed with fruit.
If you don't blend it quick enough, you may get lumps of cream in the ice cream - I don't worry about that because I like the taste of the cream bits.
NB strictly speaking, it's not ice cream because it's not made from custard but I think it tastes way better than real ice cream anyway!
Ingredients
- 1 packet of frozen berries - I find raspberries work best (for a fruitier, firmer ice cream use a 500g pack, for a softer creamier ice cream, use a 300g pack)
- 300 ml fresh cream (the pouring variety with nothing added is best)
- 1/2 to 1/3 cup of sugar (go with 1/2 cup if you used 500g of frozen fruit and 1/3 cup if you used the 300g packet)
Method
Put all ingredients into a stable bowl (tip: sit it on a rubber mat or folded up dish towel for extra stability) and blend with a hand blender. You can also blend it in a food processor, blender or Magic Bullet.
That's it! It's best served immediately but if you like your ice cream a bit firmer then leave it in the freezer for a bit (not too long or it will go hard).
It sets really well in fancy ice cube molds and it makes great summer popsicles.
