Recipe for Argentinian Locro: Beef and Vegetable Stew


two ears of corn

3 pints water

1 teaspoon salt

three quarter pound stew meat cut into 1 inch cubes

three Summer squash peeled

three carats

three potatoes

three sweet potatoes

two tablespoons of oil

one onion chopped

one green pepper chopped

one tablespoon chopped parsley

Cut corn off of ears and boil for five minutes in boiling water to which salt has been added. Add meat and simmer for 30 minutes. Add squash, carrots, potatoes both (white and sweet), and simmer for 2 ½ hours or until a thick sauce results. In a separate pan sauté onions, green pepper, and parsley in the oil. Add vegetables and meat mixture and serve as hot stew. Yield three servings
