Recipe for Enchilada Casserole

This is an easy recipe and one of my families favorites. It's done in about 30 min. or less,depending on how quick you are at chopping veggies. So I hope you try it and I hope you enjoy it as much as we do.

Ingredients are as follows:

2lbs. of lean ground beef

2 cans cream of mushroom soup

2 cans of diced green chile

1 can diced jalapeno peppers

1 small onion

lettuce, tomato,sour cream

1can of black olives sliced

1 package of corn tortillas at least 24 count

and 2 cups of shredded cheese either monterey jack or cheddar

In a large sauce pan you need to brown the ground beef,once it's ready add the diced onion,cream of mushroom soup and all the cans of chile.Add 1/2 can of water to mixture,stir and simmer on med for 15 minutes. Stir occasionally to prevent it from burning on the bottom of the sauce pan.

while mix is simmering dice up the lettuce,tomato. Shred the cheese and set aside for later use. Then in a fry pan put a small amount of oil about 1/2 cup.Let the oil heat on med. When oil is well heated you need to fry the corn tortillas in it. Don't cook them until they're hard. You want them to be soft but flavorful. So put them in when you see them bubbling about 3 seconds on each side take them out and place them on a paper towel to get rid of some of the oil.You will need about 14-16 tortillas for an 8x11 casserole dish.

Once all the tortillas are done turn off the oil and turn off the mixture. Put a layer of tortillas on the botton of the pan,sprinkle the tortillas with salt. Then put half of the mixture on top of the tortillas spread it out then sprinkle half of the cheese on top and then put half of the oleves on top of that.

Repeat the process with the rest of the mixture. Place casserole in a 350 degree oven for 15 minutes. Then take it out let it set for about 10 minutes this will keep the casserole from falling apart when you cut slices..

Then slice in whatever size you would like top with sour cream,lettuce and tomato. then enjoy..

It might sound like alot but I tell you it's easy mostly alot of dicing. But once you make it the first time it will be a breeze after that. I hope you like it please let me know..
