Banana Bread French Toast
Nunny's house was the gathering place for all of her neices and nephews. Nunny was famous for always having treats in the house for her family's children. When Nunny had her grandchildren over she always made something just a little bit extra for them.
As an example of how children oriented Nunny was this is a true story from her grandchildren. When she was babysitting on a Saturday night, she would make individual bags of popcorn for the children and sit them down in front of the black and white TV to watch Lawrence Welk. This was called going to the movies at Nunny's house.
This breakfast recipe was just one way that Nunny made everything special that she served to her family.
Ingredients
- 4 eggs or equal egg sub.
- ½ cup unsweetened Applesauce
- 2 tsp. Cinnamon
- 1 Tbsp. Canola oil
- 2 tsp. Butter
How To Mix and Bake
Let the banana bread cool in pan for 10 minutes.
Remove the bread from the pan and let it cool completely, then slice into 1 inch thick slices.
Leave the banana bread spread out to dry for at least 10 hours.
When bread has dried, beat together the 4 eggs or egg substitute, applesauce and cinnamon.
Place bread slices in a casserole sprayed with non-sticking cooking spray.
Pour the egg mixture over the bread and let stand in the refrigerator for 4 to 8 hours.
When ready to serve, preheat oven to 350°, dot the bread with butter and bake until golden, about 15 to 20 minutes.
Serves 4 to 6.
