Bear N Mom Recipes - Carrot Cake with Cream Cheese Icing
This is a favorite of mine because I really like the spice taste and the cream cheese icing together.
A lot of restaurants and bake shops decorate this cake with crushed walnuts around the edge. This not only adds to the decorative presentation it adds to the flavor that is achieved.
1-1/2 cups corn oil
2 cups sugar
2 cups flour
2 teaspoons cinnamon
2 teaspoons baking soda
2 teaspoons vanilla
1 teaspoon salt
2 cups shredded carrots or 4 medium
1 cup chopped walnuts
1/4 cup crushed pineapple & bit of juice
You can add raisens if desired.
How To Mix and Bake
Combine sugar and eggs and then add oil.
Mix together flour, cinnamon, soda and salt.
Add to egg mixture and then add additional ingredients.
Mix until blended.
Pour into greased 13x9 pan.
Bake at 350° for 50-60 minutes.
Ice with Cream Cheese
Cream Cheese Icing
1 3 oz cream cheese
1-1/4 cups powdered sugar
1/2 cup margarine
1/2 cup chopped nuts on top
How To Mix
Mix cream cheese, margarine and sugar until fluffy..
Spread over cake or cupcakes.
Sprinkle nuts if desired
