Corned beef brisket is another way to make a great tasting beef roast while adding zing to the flavor with pickling spices. The meat turns out really tender and can also be used for making pulled beef sandwiches.

Ingredients

4 lb. Beef Brisket
pickling spice
stalk of celery
peeled carrot
whole onion
dry mustard
1/3 cup brown sugar

How To Mix, Cook and Roast

Place brisket in the crock pot and cover with boiling water.
Add pickling spice, celery, carrot and onion.
simmer for 4-4-1/2 hours on low heat.
take brisket and place in roasting pan.
Score brisket diagonally.
Rub dry mustard and brown sugar into roast.
pour pickling juice into pan. Roast for an hour at 300°.

Pulled Corned Beef

Pulled corned beef is great served on a bun with a tablespoon of coleslaw on it. Toast a large bun and then layer your pulled beef. Add the coleslaw for that extra zing and you have a fabulous alternative to the original corned beef sandwich.
