Bear N Mom Recipes - Cucumber-Onion Salad Recipes With and Without Sour Cream

This was one of my mother's favorite salads. It ran a close second to her Waldorf Salad. She would make this and it would be gone in just a couple of days. I'm not sure if she made this because she liked it so well or because it is so good for people who are dieting.

Summer is so much fun with abundance of vegetables for salads that you can only make in the summer. When I was growing up there was only one store in our area that carried out of season vegetables. They were normally too high priced for our budget but he carried them for the folks who were better off and delivered all sorts of out of season vegetables and fruits to them.

In today's world you don't have to wait for summer to have any salad or fruit. The supermarkets or Market District Stores as they prefer to be called all carry an assortment of every imaginable vegetable and fruit.

This cucumber recipe can be made with or without sour cream dressing. I'm going to give you both recipes here.

Cook Time

  • Prep time: 2 hours 25 min
  • Ready in: 2 hours 25 min
  • Yields: 4-6 Servings

Ingredients

  • 2 mild Onions
  • 2 large Cucumbers
  • Salt & Pepper
  • Water
  • 1/2 cup Vinegar

Cucumber-Onion Salad

Peel onions and cucumbers and cut into wafer thin slices.

Cover with salted ice water and let stand in refrigerator for several hours.

Drain and add 1/4 cup cold water, vinegar, sugar and salt. Pepper to taste.

Cucumber Salad with Sour Cream Dressing

Almost the same as above.

Add Sour Cream to the ingredient list.

Peel onions and cucumbers and cut into wafer thin slices.

Cover with salted ice water and let stand in refrigerator for several hours.

Add 1/2 cup sour cream and 1/2 cup vinegar.

Garnish with chopped chives.

Tips about Cucumbers

The one thing to remember about cucumbers is that you can not freeze cucumbers. Shelf life is 1-2 weeks refrigerated on shelf raw until ready to use them. Once cooked, shelf life is 1-2 days.
