Sausage, Apple & Rice Casserole
This is a favorite of mine. My children were not so fond of it but my husband really liked it.
This casserole is quick and easy to make. I first tried it at work where they used all of the left over sausage from breakfast to make this dish. I worked with the recipe until I came up with this one. This was another favorite recipe that my husband liked and I made it often. In the winter I would use my apple slices that I had put up in jars.
Ingredients
1 lb. sausage browned
4-5 apples, peeled and sliced
1 cup apple juice
cinnamon and sugar to taste
1 cup minute rice
How To Mix and Bake
Brown sausage and cut into small pieces
Heat apples in microwave with 1/3 cup sugar and cinnamon to taste for 10 minutes.
Bring apple juice to a boil. I substituted the water with apple juice for a better taste to the rice.
Remove the juice from stove, add rice and cover for 5 minutes
combine, sausage, rice and apples in a casserole.
Bake in oven at 350 deg. for approximately 30 minutes
Makes 4 servings.
I mix mine in the microwave in a casserole and cook for 20 minutes at 50 percent. It can be made in the crock pot as well.
