Bear N Mom Recipes - Scotch Eggs
I first tasted this recipe at a covered dish buffet where I worked. I was so impressed with the taste and ease with which these are made that I added them to my list of party foods.
The sausage for these eggs can be purchased in several ways. You can buy loose or bulk sweet sausage or you can buy the rolls of any brand sausage. If you buy the sinks of sausage you will need to slit the skins and remove the sausage.
This recipe is quite simple and very tasty. When you need to bring a covered dish for a brunch, try making these for something different.
For those of you who like to try new ways of cooking, I recently found a method of cooking hard boiled eggs in the oven.
These eggs can be eaten warm or cold.
- 1 dozen Eggs
- 1 lb. Loose Sausage
- Bread Crumbs
- Hard boil as many eggs as you will need to feed your family or take to any party. Remove the shells and let cool.
- Cover the cooled hard boiled eggs with your sausage to cover. Cover the Sausage with bread crumbs, then in scrambled eggs and then again in the bread crumbs.
- Deep fry the eggs for a few seconds, just enough to harden the sausage and bread crumbs.
- Put the deep fried eggs into a baking pan and bake at 350° for about 5-7 minutes.
