Easy Dessert Recipes

If you want easy dessert recipes, you have come to the right place. New dessert recipes are great to try out for family and friends. These three recipes in this article are sure to bring a smile to most dessert loving people. Blackberry cobbler, Key lime cake and Rocky Road Fudge Bars and delicious desserts. Fruit based desserts are always a family favorite, and you may use fresh or frozen fruit.

We always enjoy either buying or picking fruits when they are in season and enjoy them throughout the winter. A neighbor about a half a mile away grows blueberries, and I always pick them at the beginning of the summer and freeze them, as they are good in pancakes, muffins, pies, and other desserts.

Last year we happened to be at the farmers market, and they had fresh blackberries at a good price, so we filled out freezer to enjoy the berries throughout the winter. Sometimes I buy fruit at the market, particularly strawberries, and make preserves, which is a big hit in our family. Most of the time I freeze a variety of fruit, then, it is available when I want to bake. In fact, I just made a blackberry cobbler today.

Black Berry Cobbler Recipe

Today I tried a new recipe given to me by a girlfriend. We trade recipes quite frequently. This black berry cobbler just came out of the oven looking great and smelling even better.

Frozen Black Berries Mixture

Ingredients

  • 6 cups fresh or frozen blackberries
  • 1/2 cup sugar
  • 3 tbsp. cornstarch
  • 1 tsp. lime peel, grated
  • 1 1/3 cups all-purpose flour
  • 3 tbsp. sugar, divided
  • 1/2 tsp. salt
  • 1/4 tsp. baking soda
  • 7 tbsp. cold butter, divided
  • 1/2 cup sour cream
  • 1/4 cup heavy whipping cream

Instructions

  1. Place fresh or frozen blackberries in a large bowl. Combine the sugar, cornstarch and lime peel; sprinkle over berries and gently toss to coat.
  2. Pour into a greased 9" square baking dish.
  3. In a large bowl, combine the flour, 2 tbsp. sugar, baking powder, salt, and baking soda.
  4. Cut in 5 tbsp. butter until crumbly. Combine sour cream and heavy cream; gradually add to crumb mixture, tossing with a fork until mixture forms a ball.
  5. Roll out to fit top of baking dish. Place filling over pastry. Trim and seal edges. Cut slits in top.
  6. Melt remaining butter and brush over pastry. Sprinkle with remaining sugar.
  7. Bake uncovered, at 375° for 30 minutes. Cover and bake 15-20 minutes longer or until filling is bubbly and crust is golden brown.
  8. Cool for 15 minutes before serving.

Rocky Road Fudge Bars

Ingredients

Bar:

  • 1/2 cup margarine or butter
  • 1 square (1 oz.) unsweetened chocolate or one envelope pre-melted unsweetened baking chocolate flavor.
  • 1 cup sugar
  • 1 cup all-purpose flour or unbleached flour
  • 1/2 - 1 cup chopped nuts.
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 2 eggs

Filling:

  • 8 oz. pkg. cream cheese, softened ( reserve 2 oz. for frosting).
  • 1/2 cup sugar
  • 2 tablespoons flour
  • 1 cup margarine or butter, softened
  • 1/2 teaspoon vanilla
  • 1/4 cup chopped nuts.
  • 6 oz. pkg. (1 cup) semisweet chocolate chips, if desired.

Frosting:

  • 2 cups miniature marshmallows.
  • 1/4 cup margarine or butter.
  • 1 square (1 oz.) unsweetened chocolate or one envelope pre-melted unsweetened baking chocolate flavor.
  • 2 oz. reserved cream cheese
  • 1/2 cup milk
  • 3 cups powdered sugar
  • 1 teaspoon vanilla

Directions:

Heat oven to 350°. Grease (not oil) and flour 13" X 9" pan. In large saucepan over low heat, melt 1/2 cup margarine and one square chocolate. (Lightly spoon flour into measuring cup; level off). Add remaining Bar ingredients; mix well. Spread in prepared pan.

In small bowl, combine 6 ounces cream cheese with the next 5 filling ingredients. Beat 1 minute at medium speed until smooth and fluffy; stir in nuts. Spread over chocolate mixture. Sprinkle with chocolate chips. Bake at 350°, for 25 to 35 minutes or until toothpick inserted in center comes out clean. Remove from oven; sprinkle with marshmallows. Bake 2 minutes longer.

In large saucepan, over low heat, melt 1/4 cup margarine, 1 square chocolate, remaining 2 ounces cream cheese, and milk. Stir in powdered sugar and vanilla until smooth. Immediately pour over marshmallows and swirl together. Cool; cut into bars. Store in refrigerator.

Eat these delicious bars in moderation if you're watching your calories!

Recipe for Key Lime Pound Cake

If you are looking for an easy recipe. I think you will find this pound cake delicious. I use this particular recipe for company, because everyone seems to love it.

Ingredients:

  • 1 cup butter, softened
  • 1/2 cup shortening
  • 3 cups sugar
  • 6 large eggs
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking powder.
  • 1/8 teaspoon salt
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon lime zest
  • 1/4 cup fresh Key lime juice
  • Key Lime Glaze

Directions:

Preheat oven to 325°. Beat butter and shortening at medium speed with a heavy-duty electric stand mixer until creamy.Gradually add sugar, beating at medium speed until light and fluffy. Add eggs,1 at a time, beating just until blended after each addition.

Stir together flour, baking powder, and salt. Add to butter mixture alternately with milk, beginning and ending with flour mixture. Beat at low speed just until blended after each addition. Stir in vanilla, lime zest, and lime juice. Pour batter into a greased and floured 10" (12 cup) tube pan.

Bake at 325° for 1 hour and 15 minutes to 1 hour and 20 minutes or until a long, wooden pick inserted in the center comes out clean. Cool in pan on a wire rack 10 to 15 minutes; remove from pans to wire rack.

Prepare Key Lime Glaze, and immediately brush over top and sides of cake. Cool completely ( about 1 hour).

Key Lime Glaze:

Whisk together 1 cup powdered sugar, 2 tablespoons fresh Key lime juice, and 1/2 teaspoon vanilla extract until smooth. Use immediately.

Peach Cobbler

Peach Cobbler

Peel, pit and slice 3 cups of fresh peaches

1 tsp. cinnamon

1/2 c white sugar

1/2 c shortening

1 cup white sugar

1 1/2 c. flour

2 tsp baking powder

1/2 tsp. salt

1 cup milk

2 cups of boiling water


Preheat over to 350°

Grease 10'x10" baking dish.

  1. Stir together peaches, cinnamon and 1 1/2 c. sugar. Set aside.
  2. In a medium bowl, cream together shortening and 1 cup of sugar. Mix in flour, baking powder and salt alternately with milk. Pour into prepared pan. Top with peach mixture. Drop butter into boiling water and pour over peaches.
  3. Bake in preheated oven for 40-45 minutes, until golden brown.

Fabulous ideas, Pamela - since I can't eat chocolate I tend to love things with berries and fruits....can't wait for that time of the year!!! It'll be here before I know it and I'll be dehydrating and freezing for sure. Used to can too but just don't have the time especially with the new puppy.

Pam I am always so hungry after reading your articles that offer recipes! I am not a fan of picking the blackberries from our vines in the backyard, too many thorns.
