Eggplant Lasagna for men who can not cook.

I can not cook; this was certified in my high school years and and as young man in medical school. But I found that I could learn to cook certain recipes. While taking care of my ailing dad and mom I was forced to cook. I gradually learned some simple cooking skills and recipes. The recipe I am about to write about I just made yesterday, 08/31/2009.

I call this recipe Eggplant Lasagna. There is no pasta in this dish. The eggplant serves as the lasagna slices. Ingredients:

One eggplant

one 6 oz can of tomato sauce

one 10.75 oz can of condensed tomato soup

1/2 tsp of salt

1/2 tsp ground pepper

1/8 tsp of ground tumeric

1/8 tsp of ground mustard

kraft's italian five cheese (this is great cheese, it is a shredded blend of five cheeses ; mozzarella, provolone, romano, asiago, and parmesan cheeses.

flour for dusting the eggplant slices

I first sliced the eggplant as shown in the YouTube video. I then dipped each slice in water. I then salted and peppered each side of each slice of eggplant. I then breaded each slice with flour. I deep fried each slice till each side was golden brown.

While the eggplant was deep frying I made my marinara sauce; (You can simply buy your marinara sauce.) I mixed the can of tomato paste ,the can of condensed tomato soup, the salt, the pepper, the ground tumeric the ground mustard, I then microwave this sauce for 90 seconds.

Once the eggplant slices were ready I spread the marinara sauce onto one slice then topped this spread with shredded five cheeses. I then placed a second slice of eggplant onto the prepped slice and covered this second slice with shredded five cheeses. I the microwaved this for 90 seconds to melt the cheese.

This creation is absolutely delicious. I guess/estimate the caloric value of one serving is between 400 to 650 calories.

My mother and dad love eggplant. They cooked it all of my childhood and grew it in our gardens every summer.

This sounds divine - I love eggplant - unfortunately my husband and daughter don't!

Loved that video - there's nothing quite like moussaka and ouzo under a Greek sun!
