Fast and Tasty Recipes on a Small Budget

Cut short for time, and low on groceries. Hmmm...

Sometimes I forget to make dinner till it's almost too late at night to do anything, and with an almost empty fridge it can be really hard to come up with a dinner plan on those nights. So here are a few recipes I use when those situations arise.

Dill and Yogurt Dip (5 min)

Serves 6

Ingredients: 1 cup plain yogurt, 1/2 tsp salt, 2 tbsp dill, and 1 minced clove of garlic.

This is a very quick and easy dip and it goes good with chips, fries, and most potato recipes. Simply mix everything together into a small bowl, and serve. There's no specific order needed for mixing this one, and unless your yogurt has gone bad then it turns out perfect every time.

Chopped Steak and Sauce on Rice (20-25 min)

Serves 2

Ingredients for Rice: 1 cup rice, 1/2 cup vermicelli noodle, 2 tbsp canola oil, a pinch of salt, and 5 cups boiling water.

Heat up the oil in a deep sauce pan, and add the vermicelli. Cook till the noodle turns a golden brown then add the rice. Mix thoroughly, and sprinkle the salt over top. While you mix you'll notice how the rice turns a brighter white color. Keep mixing till most of the rice has turned. Add water, and cover with a lid. Let sit on medium heat till all the water has cooked off.

Ingredients for Sauce: Two small steaks chopped into cubes, 3 tbsp tomato paste, 2 1/2 cups water, one minced garlic clove, pinch of red chilli pepper, pinch of mint, pinch of salt, 1/2 cup chopped green onion, and half a small onion cut into large chunks.

Mix everything but the steak into a soup pot on medium heat, and bring to a boil. Then add the steak chunks, and let cook till most of the water has evaporated. It will turn into a thick sauce in less than 20 min. By that point the meat should be fully cooked, and ready to serve with your rice.

Stuffed Tomatoes (25 min)

Serves 2

Ingredients: 2 large tomatoes, 1 cup crumbled feta, 1 minced garlic clove, pinch of mint, and 1 cup tomato sauce.

Slice the tomatoes in halves, and dig out a slight amount from the insides with a spoon to create shallow tomato bowls. Mix the garlic, mint, and feta in a small bowl, and spoon into the tomatoes. Place in a shallow baking dish, and preheat the oven to 450 degrees. Pour tomato sauce over the tomatoes, and cook in oven for 20 minutes then serve.

Cheesy White Potato Casserole (25 min)

Serves 2

Ingredients: 2 large potatoes chopped into cubes, and boiled till soft. 2 cups milk, 1/2 cup chopped green onion, 1 small onion chopped into chunks, 2 tbsp butter, 2 tbsp flour, pinch of salt, 1/3 cup grated cheddar cheese, and 2 cloves of garlic minced.

In a deep casserole dish place the potatoes, onion, green onion, and garlic in layers. Whichever order is up to you. In a small soup pot melt the butter, and then swiftly mix in the flour. While continuing to stir mix in the milk, and salt. Let cook till the sauce thickens. Preheat oven to 450 degrees, and pour the sauce over the potato mix in the casserole dish. Cook for 15 min uncovered. Sprinkle on the cheddar, and cook for 5 more minutes then serve.

Egg and Spinach Wraps (15 min)

Serves 1

Ingredients: 3 large eggs, half a large handful of spinach finely chopped, 2 tbsp feta crumbled, pinch of salt, and 1 tsp butter.

Mix the eggs together in a small bowl, but just enough to break the yolks and spread them out a bit through the whites. Melt the butter in a large sauce pan, and then pour in the eggs like a pancake. Sprinkle on the salt, feta, and spinach then cover with a lid till cooked. Take a butter knife and gently slice the egg pancake in half. Flip each side, and cook for 20 more seconds. Place on a dish, and roll from one side to the other like a wrap with the feta, and fixings on the inside of the wrap. Hold in place with a toothpick, and serve.
