Red Curry Cheesy Meat Balls with Charred Eggplants

Initially, I wanted to make my own Kofta balls but didn't really know how and I was lazy to Google it. So I just grabbed whatever I found in the grocery and mixed it up with cheese and basil filled meatballs.

Coconut milk and red curry paste for the sauce garnished with parsley and basil and added some charred eggplant (I chose to do this on purpose for the dry smokey texture to mix with the saucy and cheesy meatball) on the side to balance the taste. It was surprisingly awesome.

Yields: 2 to 3 people

Ingredients

  • salt
  • pepper
  • garlic powder
  • red curry paste
  • coconut milk
  • ground beef
  • cheese
  • fresh basil
  • fresh parsley
  1. Cook coconut milk and red curry then set aside
  2. Shape ground beef into meatballs and put cheese and fresh basil inside
  3. Fry meatballs
  4. burn sliced eggplant directly on the flame of the stove
  5. mix all together in a bowl then garnish with fresh parsley and fresh basil
