SALAD DRESSINGS

Advantages:

  • Adds flavor to lettuce and salad greens.
  • Very good source of vitamin E.

Disadvantages:

  • Cheese, creamy, and oil salad dressings and mayonnaise are very high in fat.
  • Additives can cause an allergic reaction in some persons.

Different types of salad dressings impart flavor and interest to lettuce and other salad greens. Salad dressings are important in egg, potato, tuna and similar salads because these salad dressings hold the salad ingredients together. Olive, corn and other vegetable oils used in most salad dressings are rich in vitamin E. Also, their fats are unsaturated, hence they do not raise blood cholesterol levels. But, the traditional salad dressings add lots of calories. Those made with cheese, eggs or sour cream contain saturated fats and cholesterol.

Vinaigrette salad dressing is made by mixing vinegar and oil. In this dressing 3 to 4 parts of oil and 1 part vinegar are used. But, we can use lesser quantity of oil by mixing it with wine or rice vinegar. We can also dilute with water, defatted broth, wine, or juice, as the taste demands. We can also reduce the amount of oil by using walnut or olive oil.

We can get a creamy texture without saturated fats, by adding fat-free yogurt to a vinaigrette dressing. We can also replace some of the oil by buttermilk.

We can blend equal amounts of low-fat cottage cheese and yogurt with a little vinegar to make a creamy salad dressing.

RUSSIAN SALAD

The first time I tasted a Russian Salad was in an IAF party way back in 1975. I could not forget its taste ever since. I failed to taste it again ever since as it was not on menus in the restaurants I visited over the years. Recently I got to relish it in a local hotel and it tasted great so I consulted the hotel chef and learnt to make it for myself.

Here is the Recipe of Russian Salad as I make it:-

Ingredients: ( serves 4 persons )

A]

250 grams of following:

Lightly Boiled but cooked and cubed vegetables like potatoes and carrots

Lightly Boiled green peas

1 inch pieces of lightly boiled French beans

Small cubes of cheese

Small pieces of tinned or fresh pineapple

Small cubes of ripe mango fruit

Small cubes of apple fruit

B]

Juice of one lemon

Salt and powdered pepper to taste

Sugar 1 tspn

C]

Mayonnaise one cup

D]

For Salad decoration:

Thin slices of Apple

Cherries

METHOD:

In a salad bowl add all the ingredients mentioned in part A]

Sprinkle those mentioned in part B]

Toss the salad and add Mayonnaise as mentioned in part C]

Transfer the salad to a serving salad plate.

Decorate with sliced apple and cherries

Serve chilled.

Oh the world is full of salads! A Russian that I used to spend time with had a version of Russian salad that she claimed consisted of whatever you have left over in the fridge. She also used ham. I like how you pair veggies and fruit!
