STUFFED ARTICHOKES

STUFFED ARTICHOKES WITH

SEAFOOD STUFFING

SCALLOPS & SHRIMP

(INGREDIENTS)

5-Artichokes (good size)

2-Cups of Italian bread crumbs

½ cup of Grated cheese

¼ Cup olive oil

1-bag of frozen or fresh scallops about a pound

½ Lb of cooked shrimp

1-fresh Lemon

2-Small Containers of seafood stuffing (store bought) Pinch of salt & pepper

First thing to do is, get all yours ingredients mixed Up, start by putting your seafood stuffing In A large Bowl, and dice up your scallops and shrimp and add To the stuffing mix, then add your Grated cheese and Salt and pepper, once all mixed up good put in the Refrigerator, until your Ready to stuff your artichokes.

OK let’s start preparing the artichokes

First peel back about 1 to 2 layers of the outside leafs Tip watch out for the pointy part of the Chokes they Hurt, and place on a flat surface, and cut the bottom stem off all of them, next Take about an inch off the Top as well, once that’s done place in a large boiling Pan, and boil For about 20 minutes, until there Slightly soft, then place on a flat surface and cool for About 10 minutes or so.

OK let’s start stuffing the artichokes

First is to do is gently spread the artichoke apart, Then pull the center part of the artichoke, And This can be done by grabbing the center leafs and Gently pulling out the choke Area, Which is white on The bottom, once there all pulled out.

Get your Stuffing from the Refrigerator, and start stuffing, the Center part of the artichokes, And the outer side leafs ,gently you don’t want The Artichokes to fall apart.

 You still have to bake Them, once all filled in the center, take you Italian bread crumbs and fill The outer leafs until desired. Then add some olive oil to the top And around all of Them, next Squeeze some lemon on the top, and finish With grated cheese, As the final topping, and Place in A deep baking pan.

Now you’re ready to baked

Preheat your oven to 350 degrees and add about an Inch or two of water to the bottom of the Pan, and Place your artichokes gently in the pan, and cook for About 20 to 30 minutes in the Oven, tip make Sure you keep checking the water level, if needed add More water, you don’t Want the artichokes to burn on The bottom.

After 20 to 30 minutes pulled out of oven And let Sit for 10 minutes or so, and place on a plate With a slice of lemon as a garish, I know that You will Enjoy them. I always do.
