Salmon Mousse Recipe
This cold mousse is good for a party or buffet. It is inexpensive because it calls for a can of salmon instead of fresh fish.
1 envelope unflavored gelatin
1/4 cup lemon juice
1/2 cup water
1/2 cup mayonaise
1 can salmon (16 ounces)
1/2 cup heavy cream, whipped
1 cup grated cucumber
dash Tabasco sauce
Remove skin and bones from drained salmon, flake the fish.
Dissolve gelatin in water. Combine with rest of ingredients. Mix well. Pour into greased 5 cup mold. Chill until firm.
Turn out on to a platter and garnish with parsley and lemon slices.
