Step 1-Cottage Cheese Making Procedure For Sandesh: WHile making cottage cheese for Sandesh, we need to use curd instead of any acids like lemon or vinegar, etc. so that the cottage cheese is supersoft which in turn is the reason behind supersoft Bengali sweet. So, boil milk and slowly keep adding curd and quickly switch off the gas as soon as the solid part of milk separates from the liquid or else the cottage cheese will harden. Now, drain the water using a muslin or cotton cloth.

Now, take a big plate and add sugar in the freshly prepared and warm cottage cheese. Now, start smoothening the dough between your hand and plate taking a bit at a time till the whole dough is as soft as velvet or silk and no granules are left. It will take a good 20 minutes time and it is the most important procedure. Now, food processors are available where one can use the dough-making attachment but still finally take out the dough and test that if any granules are left then smoothen them well with hand.

Step 3- Place the well-mixed dough at a very-very low flame and keep stirring constantly and removing the pan from the flame once in a while to avoid overheating and to avoid lumps. This process will take a few minutes till the dough starts leaving the pan and is no more sticking. Then swiftly remove the pan from the pan and take out the dough in a dish. Avoid overheating.

Step 4-Now, add rose water on it and stir the dough a few more times.

Step 5-Prepare the pistachios and cardamom in two separate dishes or plates.

Step 6-Now start making small portions of required size from the mixture. Moulds are available in the market or one can flatten them or round them with the use of hand to their desired shapes.

I'm on a diet right now so I have to avoid all sweet foods (I have a total sweet tooth) but the recipe alone has my mouth watering. I LOVE rose-scented sweets, esp. paired with pistachios. I could easily eat a dozen sandesh and want more! Thank you for sharing the recipe for when I eventually get off my diet.

Hi, Pinto, I'm glad I found your blogpage because the Sandesh looks too incredibly delicious. I've never had it, though I used to have an Indian sweets recipe book. I don't even remember the names of the sweets I made which my kids loved. I should try making Sandesh for some special event, because the cottage cheese making looks a bit complicated. So it has to be a special treat.
