WHAT IS BENGALI SANDESH?
The peculiar characteristic of Sandesh is you do not need to chew it or bite it or munch it. Just place Sandesh in your mouth and it is so soft that it will slowly melt down giving your tongue a velvety feeling. I have travelled faraway places to eat different varieties of sandesh. So you are really going to relish sweet recipes like Bengali sandesh.
A FEW THINGS ABOUT SANDESH(A BENGALI SWEET DELICACY)
If anywhere in the world people like sweet meat more than anything it is, Bengal (situated at the eastern part of India), the cultural capital of India. Here the language is Bengali one of the sweetest language in the world and it is often said that they speak so sweetly because they eat too much sweet meat. They eat thousands of variety of sweet meat but one thing stands distinctly is Sandesh. If in India you will say Sandesh, people will say it is originally found in Bengal.
Such is the magic of Sandesh that it is gifted to each other in celebration times in India, specially Bengali household and considered auspicious offering it before deity.
SWEET RECIPES LIKE BENGALI SANDESH
There are hundreds of varieties of Sandesh but the basic concept is same and only the garnishing or final touchup is different for this bengali sweet. Sweet meat recipes for sandesh making is closely guarded among top Bengali sweet meat makers.
SWEET MEAT RECIPES FOR THIS BENGALI SWEET
500 gms cottage cheese (paneer)
200 gms sugar or jaggery or dates (Khajur ka Gur)
2 tablespoon of rose water
1 tablespoon of green and grounded cardamom seeds
20 pistachios or Pista (thinly sliced)
Most Important While Making Sandesh: The cottage cheese (paneer) we use to make sandesh is made freshly at the time we need to start Sandesh making procedure, so there is no question of buying readymade cottage cheese.
Step 1-Cottage Cheese Making Procedure For Sandesh: WHile making cottage cheese for Sandesh, we need to use curd instead of any acids like lemon or vinegar, etc. so that the cottage cheese is supersoft which in turn is the reason behind supersoft Bengali sweet. So, boil milk and slowly keep adding curd and quickly switch off the gas as soon as the solid part of milk separates from the liquid or else the cottage cheese will harden. Now, drain the water using a muslin or cotton cloth.
Step 2-Now, you have covered the first and foremost important part of Sandesh making, i.e., supersoft cottage cheese (paneer) which is hot also. So, wait till you are able to hold it in your hand. Now, take a big plate and add sugar in the freshly prepared and warm cottage cheese. Now, start smoothening the dough between your hand and plate taking a bit at a time till the whole dough is as soft as velvet or silk and no granules are left. It will take a good 20 minutes time and it is the most important procedure. Now, food processors are available where one can use the dough-making attachment but still finally take out the dough and test that if any granules are left then smoothen them well with hand.
Step 3- Place the well-mixed dough at a very-very low flame and keep stirring constantly and removing the pan from the flame once in a while to avoid overheating and to avoid lumps. This process will take a few minutes till the dough starts leaving the pan and is no more sticking. Then swiftly remove the pan from the pan and take out the dough in a dish. Avoid overheating.
Step 4-Now, add rose water on it and stir the dough a few more times.
Step 5-Prepare the pistachios and cardamom in two separate dishes or plates.
Step 6-Now start making small portions of required size from the mixture. Moulds are available in the market or one can flatten them or round them with the use of hand to their desired shapes.
Step 7-Now dip the top of your middle finger in each plate of pistachios and cardamom and coat the upper part of Sandesh with them.
Step 7-Savor, devour, gorge, eat, your Sandesh sweet meat is ready.
