Savory Pasta Salad Recipes

Pasta salad is a staple side dish in just about every backyard barbecue, park picnic, beach picnic, or other gathering where people bring potluck dishes.  Nearly as popular as potato salad, pasta salads have endless variations and bases for just about every taste.  Some of my favorites combine some unusual (in that, you wouldn't think to put these together) ingredients.

Marion's Macaroni Salad

Ingredients

1 box elbow macaroni, cooked

4 hard-boiled eggs, diced

2 celery stalks, sliced

1/2 sweet onion, diced

1/2 jar green olives, sliced

4 tbsp. mayonnaise

1 tsp. each salt, pepper and garlic

1 tbsp + 1 tsp. Italian seasoning

Combine all ingredients in a large bowl. Refrigerate 2 hours before serving.

Serves 8 to 10 people.

Picture Perfect Pasta Salad

Ingredients

1 box bow tie pasta, cooked

1 head broccoli, cut up

8 button mushrooms, sliced and lightly sauteed

3 tbsp. olive oil

1 tsp. each salt and pepper

1 tbsp. + 1 tsp. Italian seasoning

Combine all ingredients in a large bowl.  Refrigerate 2 hours before serving.

Serves 8 to 10 as a side dish, or 4 as a main dish.

Tips:  Add tuna or cut up baked chicken breast for a hearty main dish.

Your first recipe sounds especially intriguing. It sounds almost like a potato salad with pasta. My wife makes a really great potato salad, her secret ingredient is... about 1/2 Tbs. Texas Pete! Try it, it's great! Great hub!

You're right, nifty. It is almost like a potato salad. Pasta salad and egg salad are two of my favorite dishes so I just combined the two one day and came out with this which has been a hit among friends and family for years. I'll have to try your wife's secret ingredient. Thanks for the tip!
