Shredded Beef Chimichanga Recipe

Have you often wondered exactly what is a Chimichanga? Well what is is exactly is a burrito that is deep fried rather than baked. And if made correctly and cooked the right way they are oh so delicious. You will want to deep fry your Chimichanga's in a home deep fryer set at 350 degrees.

For your Shredded Beef Chimichanga Recipe You Will Want

A 3 Pound Cooked Beef Chuck Roast Trimmed of All Visible Fat.

1 Can of Diced Tomatoes With Garlic, Basil and Oregeno

1 Large Green Bell Pepper Roasted , Cleaned And Diced Fine.

1 Large Red Bell Pepper Roasted , Cleaned And Diced Fine.

1 Purple Sweet Onion Chopped Fine.

1 Cup Of Red Wine.

2 Cups Of Beef Broth.

3 Tablespoons Minced Fresh Garlic.

1 4 Ounce Can Green Chilies.

1 Tablespoon Oregano.

16 Large Flour Tortillas.

1 Pound Shredded Four Cheese Mexican Cheese.

You will want a home deep fryer with vegetable oil and you will want it set to 350 degrees when you get ready to fry your Chimichanga's.

Cook your beef chuck roast rubbed with olive oil, sea salt, black pepper and ground garlic. Trim away any visible fat and shred with a large fork.

How To Fold Your Chimichanga's

Place your contents in the center and fold the two sides in to start folding your chimichangas.

After you have cooked your beef roast and shredded it to pieces with a fork add it to a stock pot. Now add all your other ingredients to the stock pot except your cheese or flour tortillas. Stir the ingredients up well together and heat slowly until the onion is done.

Now turn the heat off and set aside.

Now when you are ready to put the chimichangas together lay a flour tortilla down on a plate and place a generous amount of cheese on the tortilla. Now take a heaping spoon of the meat mixture allowing the juices to drain back into the pot and place it on top of the cheese. Now follow the directions above for folding your chimichanga up. Once you have all your chimichangas filled and folded on the tray or pan place in the refrigerator for at least 45 minutes before you deep fry them.
