Rich and Moist Carrot Cake

Indulge yourself with a  homemade carrot cake. Nothing compares to  homemade cake. Every bite  is sweet and savory with grated carrot, raisins, and pecans through and through.  And the flavor dancing on your tongue. The icing is creamy with a hint of vanilla.

Carrot Cake

Ingredients:

3 cups grated raw carrots

2 cups sugar

4 unbeaten eggs

2 cups sifted flour

1 ½ cups Canola oil

2 tsp baking soda

1 tsp vanilla

2 tsp cinnamon

½ tsp salt

1 cup chopped pecans

1 cup raisins

In a mixing bowl, beat eggs, sugar, carrots and oil until well mixed. Add rest of ingredients, beating well. Pour into 2 well oiled and floured 9” round pans. Bake at 350° for 40-45 minutes or until cake springs back in center when lightly touched with finger. Cool in pans for 10 minutes before turning out. Cool completely and frost.

Frosting and Filling: Cream cheese icing

1 lb box confectioner’s sugar

8 0z softened cream cheese

1 stick butter

1 tsp vanilla extract

In a bowl, combine cream cheese, vanilla, and butter, mixing until well blended. Gradually add sugar until fluffy and light. Now you are ready to fill and frost the cake.

Note: Eggs, cream cheese, and butter should be used at room temperature. Confectioner sugar should be sifted.

Delicious Rock Cookies

Irma's Rock Cookies

People don’t bake enough from scratch these days. Every holiday cousin Irma would prepare her delicious rock cookies. When you bite into one of these delicious cookies you won't be able to eat just one.


Ingredients:

1 stick butter (melted)

1 1/4 cups brown sugar

2 eggs (slightly beaten)

1 teaspoon soda in 1 tbsp boiling water

5 cups pecans (chopped)

5 cups raisins

2 cups flour

In a large bowl, cream butter, eggs, and sugar until fluffy. In another bowl, sift flour. Slowly mix flour into butter and sugar. Add the dissolve baking soda. Stir in pecans and raisins. Drop on greased cookie sheet.

Bake in 350° oven about 20 minutes.

Sweet Ooey Gooey Goodness

Easy Monkey Bread

This is the best treat for college students, when studying for exams.

Ingredients:

4 cans Pillsbury biscuit

1 ½ sticks butter

½ cup brown sugar

½ cup white sugar

3 tsp cinnamon

Preheat oven to 400°

Mix sugar and cinnamon together. Cut each biscuit into four parts. Roll in a bowl of cinnamon/sugar mixture and put in a greased bundt cake pan. Melt butter and brown sugar on low heat. Pour melted mixture evenly over unbaked dough.

Bake 20-25 minutes. Let set 5 minutes and turn on plate.

Sweet Potatoes with Bacon

Sweet Potato Ecstasy

Sweet potatoes is a vegetable especially for Thanksgiving holidays but can also be use for daily meals.

Ingredients: 

4 lbs sweet potatoes (fresh or canned)

1 lb sliced bacon

½ lb butter or oleo

If fresh sweet potatoes are used, boil them until tender in an uncovered pot over medium heat. Peel potatoes and wrap each one in a slice of bacon. Pin bacon down with toothpicks. Put potatoes in rows in a baking pan. Drop a thin slice of butter on each one.

Bake in 350° oven until bacon is crisp.
