Simple Side Dishes

Here are a couple of easy side dishes.

Baked Mashed Potatoes

I'm going to use 5 potatoes in this recipe. Adjust according to the amount of mashed potatoes you are planning to serve.

INGREDIENTS AND UTENSILS

  • 5 Russet potatoes
  • 1 cup of milk
  • Butter
  • Salt (optional)
  • Paprika
  • Large bowl
  • Hand mixer
  • Potato Masher (optional)
  • Baking pan
  • Large cooking spoon

CREATE

  1. You can either remove the skin or leave it. I do not remove the skin as there are vitamins in the skin.
  2. Run cool water over potato and make sure the skin is clean.
  3. Cut potatoes in four or if potato is long six pieces.
  4. Place cut pieces in a cold bowl of water.
  5. After all pieces have been cut, drain water
  6. Place potatoes in pot and boil for 30 minutes
  7. Take a fork and stick the potatoes to test if they are soft. If the fork smoothly goes all the way in, they are ready.
  8. Remove pot from burner and drain water.
  9. Turn oven on to 350
  10. Take a few potatoes, place them in the bowl for mixing and mash them as much as you can. Continue to do this until all potato pieces are mashed. If you have a potato masher, this will be easy.
  11. Pour in half a cup of milk, add salt (if desired) and butter (as much as you like).
  12. Put hand mixer on low. Begin to stir the mixture. Continue to add milk until the potatoes are of a consistency to your liking.
  13. It's okay to have small chunks of potato in the mixture.
  14. Scoop mixture into baking pan.
  15. Smooth the top and sprinkle with paprika
  16. Place in the oven and bake for 30 minutes

My Mom's Baked Macaroni and Cheese

INGREDIENTS AND UTENSILS

  • 2 boxes Kraft's Original Mac N Cheese
  • Milk
  • Butter
  • Shredded Sharp Cheddar Cheese (large size)
  • Salt (optional)
  • Paprika
  • pot to cook macaroni
  • pan for baking

CREATE

  1. Prepare mac n cheese as indicated on the package.
  2. When you have finished the entire process, including adding the powdered cheese, pour mixture into baking pan.
  3. Stir in shredded cheese (as much as you like)
  4. Sprinkle cheese evenly over top
  5. Sprinkle paprika evenly on top of cheese
  6. Bake for 30 minutes

The above should serve 4-6 people.
