Bisquick Mix, That Good Old Stanby!

Who doesn't have a box of Bisquick somewhere in their pantry? With all of the racing around and heavy lifting for the thanksgiving feast, it's nice to know a couple of really easy and quick recipes are around for creating unique and festive holiday appetizers. These appetizers offer a tasty and homey Bisquick flair! You will find two quick recipes here today; Creamy Molten Cheese Balls and Feather Light Fried Clam Fritters with a Tangy Mustard sauce. These festive finger foods will keep your family and friends happy and mingling while you manage the Thanksgiving feast behind the scenes. These starter foods are so easy to make the kids can even do it for you!

2 Appetizers Made in the Same Fryer

You can make both of these at the same time, as they are both headed for the fryer at an oil temperature of 375°F! Since both have such easy prep work, get all of this done for both recipes. Crank up the temperature on your oil to 375°F. Start with frying the clam fritters first, and then the cheese balls. This way the center of the cheese ball stays creamy and molten-like for service. Plate the goodies, and serve up some of the tastiest Thanksgiving starter food you have ever offered! See, you get "Two; Two Appetizers in one vat!"

How to Make Creamy Molten Cheese Ball Appetizers

  1. Heat a 2" depth of oil to 375°F in a deep-fat fryer. (Any heavy bottom pan will work for this, just maintain temperature)
  2. Beat 1 cup baking mix, the milk and egg with hand beater until smooth.
  3. Coat cheese cubes lightly with dry baking mix.
  4. Insert wooden pick into each cube
  5. Dip cubes into batter, covering the cube comepletely.
  6. Fry several cubes at a time, turning carefully, until golden brown (1 - 2 minutes)
  7. Drain on paper towels for a minute
  8. Arrange on appetizer tray

Creamy Molten Cheese Balls

INGREDIENTS (makes about 45 cheesy appetizers)

  • Vegetable oil
  • 1 cup Bisquick Baking Mix
  • ½ cup milk
  • 1 egg
  • 1 LB Monterey Jack, Cheddar, American, Swiss or mozzarella cheese, cut into ¾-inch cubes
  • Bisquick Baking Mix (for coating cheese cubes)

HARDWARE

  • Deep-fat fryer
  • Wooden picks
  • Small bowl
  • Medium bowl
  • Hand mixer (or whisk)
  • Paper towels
  • Appetizer tray

How to Make Feather Light Clam Fritters with Tangy Mustard Sauce

  1. Heat a 3" to 4" depth of oil to 375°F in a deep-fat fryer. (Any heavy bottom pan will work for this, just maintain temperature)
  2. Mix baking mix, cheese, onions, clams, reserved liquid, the egg, and Worcestershire sauce until blended.
  3. Drop rounded spoonfuls into the hot oil.
  4. Fry until golden brown on all sides, 1½ to 2 minutes.
  5. Drain on paper towels.
  6. Arrange on appetizer tray, and serve with a Tangy Mustard Sauce. (see mustard recipe below)

Tangy Mustard Suace

In a medium bowl mix together ½ cup of sour cream, 2 TBL Dijon-style mustard, 1 tsp lemon juice, dash of soy sauce, 1 tsp poultry seasoning, 1 TBL finely diced chives. Chill in refrigerator while making the clam fritters.

Feather Light Clam Fritters with Tangy Mustard Sauce

What You Will Need

INGREDIENTS (makes about 3 dozen appetizers)

  • Vegetable Oil
  • 1½ cups Bisquick Baking Mix
  • 1/3 cup grated Parmesan cheese
  • 1/3 cup finley chopped green onions
  • 2 cans (6½ ounces each) minced clams, drained (reserve 1/3 cup of liquid)
  • 1 egg
  • 2 teaspoons Worcestershire sauce
  • Mustard sauce (below)

  • Medium bowl

  • Mixing utensils
  • Spoons
  • Paper towels
  • Appetizer tray

Oh, I think I just heard my stomach rumble... that molten cheeseball sounds (and looks!) positively delectable. Like everyone who's been commenting here, I have a cheese weakness, too. Incidentally, for the last 4 years, my partner and brother have been deep-frying our Thanksgiving turkey, and we usually fry some appetizers and desserts in the oil before the turkey goes in. We've used Bisquick to batter-dip goodies like Twinkies before tossing them in to the boiling oil. :)
