Blender Tip

A high speed blender is best, but if using a regular blender, add more water in order to blend it to a creamy stage. If more thickness is desired, leave in refrigerator for a day or two, and it will get progressively thicker.

Fast Food Raw!

Cashew Cream is a staple in the live food diet. Spread it on crackers, lettuce, endive, slices of zucchini, and add a leaf of mint or basil, cranberry sauce or anything you are craving at the moment.

I make mine the easiest way possible with two ingredients.

1 C. Cashews - soaked for 5-6 hours, then drained

Celtic sea salt

Blend together, with good water, scraping sides down often. If temperature of cream gets too warm when blending, blend with a few minute intervals in between to preserve the enzymes from high temperatures.

Flavor Cashew Cream to Create a Multitude of Dishes

This creamy baset is used by itself or in combination with other things. It can be flavored in many ways and used for dips, spreads, salad dressings, to make cheeses, and desserts.

Flavorful ideas:

Ricotta cheese in raw food lasagna (add lemon juice and more salt)

Ranch dip

Thickener in salad dressing, like Greek salad dressing

Base for cheesecake like desserts

Frosting on cashew cream cheesecake

Cheese slices - (add red pepper and nutritional yeast and blend again, dehydrate in squares)
