Chicken Risotto
Ingredients
A dash of oiive oil
1 Chicken brest (organic or free range gives a good flavour)
1 onion
1/2 red pepper
1 clove garlic
250g Arborio Rice
1 litre chicken stock
2-3 Chestnut mushrooms
Preparation
Chop the onion, garlic red pepper and place in a large pan. I'm lucky in that my slow cooker pot can go on the hob, so I used this.
You will need to fry the ingredients to start with.

Chop up Chicken
Turn on the heat on the hob and start cooking the onion, pepper and garlic.
While this is cooking, chop up the chicken. When the onion appears to be soft. add the chicken.
When the chicken is cooked all the way through, add the Arborio rice and leave in the pan for around 1-2 minutes
Chicken Added
Add Half the Stock
Add 500ml of the stock. After this, chop up the mushrooms and add to the pot.
Put pot on the Slow Cooker
At this point, you can put the pot on the slow cooker and leave it for about an hour. Then add the rest of the stock.
