Slow Cooker Recipe - Slow Cooked Lamb

- 1 leg of lamb about 1.4 kg/ 3 lb in weight
- 2 tbsp vegetable oil
- 1 tsp fennel seeds
- 1 tsp cumin seeds
- 1 tsp ground coriander
- 1 tsp turmeric
- 2 garlic cloves peeled and crushed
- 2 greens chillies deseeded and chopped
- freshly cooked vegetables to serve
For the Potatoes
- 550g/ 1¼ lb potatoes, peeled
- 2 onions peeled
- 4 garlic cloves , peeled
Wipe the lamb with absorbent kitchen paper and make small slits over the meat. reserve.
Heat the oil in a fry pan, add the seed and fry for thirty seconds, stirring. Add the remaining spices, including the two garlic cloves and green chillies, and cook for five minutes. Remove and use half to spread over the lamb.
Cut the potatoes into bite-size chunks and onions into wedges. Cut the garlic in half. Place in the slow cooker and cover with the remaining spice paste then place lamb on top.
Cover with the lid and switch the slow cooker to auto for one hour. Switch the cooker to low and continue for six to eight hours, or until the lamb and potatoes are cooked. Serve the lamb with the potatoes and freshly cooked vegetables. This will be the best lamb you have eaten for a long time. It will melt in your mouth.
