How to Make Spelt Bread, Buns & Pizza

This basic bread recipe is a great way to introduce spelt and an opportunity to ween off white flour. You can experiment and vary the amount of spelt flour you use as well as add your favorite other flour once you are comfortable with the recipe.

I use my Kitchen Aid stand mixer for this recipe.

Simple Spelt Bread

The Recipe

Using a stand mixer:

dissolve 3 tbsp sugar & 1 tbsp salt in

3 cups lukewarm water, add 4 tbsp oil & stir then add 1 heaping tbsp yeast

stir gently then let sit for 10min until bubbles form.

Next add

5 cups spelt flour & 2 cups white flour plus 1/4 cup if needed, adding one cup at a time and mixing well

The dough is ready to knead when comes away from the side of the bowl cleanly.

Pour it out onto a floured counter top and start to knead it by folding in over itself and pushing it down, over and over again. The dough will start to become smooth, this is when it's almost done, give it a couple more folds, turn it over, and put it into a lightly greased bowl. Place the bowl in a warm corner with a towel over it for 60 minutes to let it rise. At 45 minutes set the oven to 350 degrees.

When the dough has almost doubled in size put it onto a lightly floured counter. Divide it into pieces according to what you are making. This recipe will make 2 large rustic loaves, so you can cut it in 2 and give each an oblong shape. The dough can also be used to make hot dog, hamburger, kaiser and smaller buns and pizza crust. It just needs to be cut and shaped accordingly. Melted butter brushed on top of the buns will make a crispy crust.

After you've shaped your dough place it on a cookie sheet sprinkled with cornmeal.

Bake for 35 to 40 minutes at 350 degrees. Wait until cooled to slice then enjoy. Tip: this recipe freezes very well after it's been baked.
