Turkey is not top on everyone list, but it does have a lot of offer. The cost is lower than beef dishes, and often people who haven't tried ground turkey dishes are pleasantly surprised once they have tasted a good one.

I often try things as I check my ingredients on-hand. Turkey is especially good for this.

I believe turkey dishes are a great alternative to beef in many recipes. I have made Turkey Meat Loaf often, but this is one dish that does need some spicing up. This recipe can be fine tuned by the maker to fit a person's preference.

This particular recipes stays dense and cuts well for sandwiches the next day. If you've never tried a Turkey Sandwich, give it a try.

Yields: 6-8

Ingredients

  • 1/3 cup Black Olives, Chopped
  • 2 Cloves Garlic, Chopped or pre-minced
  • 1 onion, medium
  • 1 green pepper, small
  • 2 tsp cumin, ground
  • 1 tsp chipolte sauce
  • t tsp Oregano, dried
  • 1/2 tsp salt, or to taste
  • 1 1/2 - 2 lbs Turkey, grouond
  • 1 Cup oats, quick-cooking
  • 2 eggs
  • 1/2 can tomato sauces
  • 1/2 can diced tomatoes
  • 1 T Olive Oil
  1. Cook onion, garlic, and peppers in pan with the olive oil until the onions begin to turn transparent. Add the spices then turn to low for 1 minute. Turn off burner, hold ingredients until the other mixture is ready to add.
  2. Beat the eggs, combine the turkey and oats. Add the saute onion mixture. I like this meatloaf spicy, so I add a little more chipotle sauce.
  3. Mix onion mixture into the turkey mixture. Mix well.
  4. Top with tomato sauce. My family prefers steak sauces for topping which makes the meatloaf darker, but I like the richer taste.
