Spinach Apples and Bacon Salad

We all know that anything you add to bacon is going to be good but what if you add some things that will take your dish to another level...That's what I want to talk to you about today Pairing good things to make them even better tasting like adding some spinach ....Spinach is very complex-ed and it can go with almost anything just like bacon can .....But by adding a fruit element like apples can take it to the level.

Apples are the secret ingredient to this salad and what makes the apple so good that it comes in so many varieties and have so many uses, Apples like red delicious, gala, American beauty, or Baldwin are apples that are crisp and delicious all by themselves but adding them to a crisp salad is taking to that level I have been talking about.....Don't get me wrong there are other apples but these are salad apples ....Apples like Rome beauties, granny smith, Winesap's are for baking while apples like jonathan's, Cortlands and Macintosh's are great for soups and sauces. So with the apple being the star in this salad let me start by sharing this recipe with you.

Spinach Apples and Bacon Salad

Ingredients

1/4 cup water

3 tbsp. red-wine vinegar

3 tbsp. olive oil

21/2 tbsp. honey

4 tsp. Dijon mustard

1/2 tsp. freshly ground smoked black pepper

1 red delicious, gala, American beauty or Baldwin, cut lengthwise into 16 slices

8 cups baby spinach - remove the stems

1 medium red onion - slice thin

6 button mushrooms - sliced thin

2 slices center-cut bacon, cooked until crispy

Combine first 6 ingredients (water through pepper) in a small bowl, stirring with a whisk to make the dressing.

Place the apple slices in a large bowl. Spoon 2 tablespoons dressing over apples; toss to coat. Add spinach, onions, mushrooms and remaining dressing; toss to coat.

Crumble the bacon and sprinkle over the top of salad., Then serve and enjoy
