Standard Mayonaise Recipe
I prefer to make my own mayonaise for two reasons; it ends up costing much less (about $0.50 a quart) and when I make it myself I know exactly what is and is not in my mayo. I don't like unnessary additives and preservatives in my food. When I make mayo at home I can adjust the ingredients to get the taste that I prefer.
To make mayo at home you will need a food processor, eggs, prepared mustard (I use yellow mustard) red wine vinegar, salt and vegetable oil.
In the food processor mix one egg, a tablespoon of mustard, and a tablespoon of red-wine vinegar until it is frothy. Very slowly drizzle the vegetable oil into the food processor until the mayo has reached the proper thickness. Add salt to taste.
Note:This is just my basic recipe. I use red wine vinegar instead of lemon juice because it will help the mayo keep longer.
