Steamed apricot pudding

Because of their high fibre content, dried apricots are one of the best cures for constipation. But let's not dwell on that! This satisfying alternative to a traditional streamed pudding is extremely light, and the ginger essence gives an extra zing to the sumptuous sweetness of the fruit. (Serves 4)

Ready-to-eat apricots: 225g, snipped into quarters
Wholemeal bread: 5 slices, without crusts
Eggs: 2 medium
Milk: 250ml
Ginger essense: 3 drops
Unsalted butter: for greasing
Hot custard: to serve

Mix togther the apricots and bread / Beat together the eggs, milk and ginger essence / Pour over the apricot mix and set aside for 20 minutes / Put into a 600ml greased pudding basin, cover with greaseproof paper and tie with string / Put the basin into a large saucepan and add enough water to come roughly half way up the sides / Steam for one and a half hours, checking occasionally to make sure the water hasn't boiled away / Serve with hot custard.
