Stir-fried warm beef salad
What an abundance of well balanced nutrients! There is masses of vitamin C in the salad vegetables and good carbohydrates in the potatoes. Too much red meat can mean your diet is high in saturated fat, but here we are using fillet. Yes, it's expensive, but it's high in protein and B vitamins and contains substantially less fat than, say, mince. (Serves 4)
Mixed salad leaves: 3 large handfuls of varied mediterranean leaves
Cucumber: half, peeled and cubed
Red onion: 1, finely sliced
Yellow pepper: 1, membranes removed and cut into fine strips
Vinaigrette dressing: 150ml
Horseradish sauce: 1 teaspoon
Aspagarus tips: 12
Beef fillet: 450g
Olive oil: 4 tablespoons
Boiled potatoes: to serve
Put the salad leaves, cucumber, onion and pepper into a large bowl / Mix together the vinaigrette and horseradish sauce and pour over the salad / Steam the asparagus tips until just tender, refresh in cold water and add to the salad / Flatten the beef with a rolling pin or meat mallet and cut along the grain into thin strips / Stir-fry in the hot oil, stirring constantly, for about 3 minutes / Remove from the oil with a slotted spoon and drain on kitchen paper / Tip into the salad bowl and toss well with the salad / Serve with boiled potatoes.
