Stormy Blueberry Jell-O Cups

This is a dessert I got the idea to make a few years ago during the summer monsoons we regularly experience in Tucson. The dish gets its name from the bluish/white swirls of gelatin and whip cream which look similar to storm clouds. It's great for a rainy day or as a summer treat. Recently I haven't been able to find blueberry flavored gelatin, but I've found that the Blackberry/Raspberry Fusion Jell-O combined with fresh blackberries works just as well.

You Will Need:

2 Packages Blueberry Jell-O (or Blackberry/Raspberry Fusion)

1 Cup Blueberries (or Blackberries)

8-12 Tbs. Cool Whip

Follow directions on package for gelatin and divide between four 6-8 oz. clear glasses and let set in fridge. When gelatin is almost completely firm, fold in 2-3 Tbs. of cool whip and 1/4 cup berries into each glass and continue to let sit until fully firm. Once the gelatin is ready, top each cup with a dollop of Cool Whip and enjoy!
