1. Strawberry Shortcake

An American shortcake is a crumbled bread leavened with baking soda or powder. But to make a shortcake, just blend sugar, flour, salt and baking soda or powder in dry form. Add butter to make a mixture like cornmeal. Then mix the eggs, milk or cream to moisten and to get the shortened dough (crumbly or mealy dough). Put the dough with spoons, either in the baking tray to make biscuits, or in a cake pan to prepare the cake. Bake at high temperature till the contents set. Split the shortcake and cover the bottom layer with whipped cream and the strawberry juice ( made from sliced and vanilla flavored strawberries mixed with sugar and left for an hour ). Replace the top layer and add more strawberries and whipped cream.

2. Strawberry Lemonade

Mix sugar (1 cup), with water (1 cup) in a pan to form a syrup and place over medium heat to dissolve the sugar then cool the mixture. Blend fresh strawberries (1 pint) with water (1/2 cup), and then stir it into the mixture of sugar syrup,lemon juice. Add cold water (5-6 cups) and serve with ice and lemon toppings.

3. Strawberry syrup sauce

This can be made to relish the texture of the pieces of strawberry in the syrup. For this take fresh strawberries( 2 cups),sugar( ⅛ cup), cornstarch( 1 tsp), lemon juice (few drops).
Wash the strawberries and chop them into fine halves or cubes.Add sugar to the chopped pieces and heat on medium to lower heat. The water content in strawberry is high so don't add water separately. When the mixture starts boiling, dissolve the cornstarch without leaving any lumps. Continuously stir the mixture, boil it for about 2 minutes, add lemon juice and again stir well. The strawberry syrup sauce is ready to be served.

4. Strawberry Syrup for Cheesecake

Take fresh strawberries(2 cups), sugar ( ¼ cup), lemon zest (1 tbsp), kirsch (2 tbsp) and water(1 cup).

Wash and clean the strawberries. Finely chop them. Cook the mixture of strawberries, sugar, the finely grated lemon zest and water over medium and low heat. Cook till the strawberries become soft and then add and stir the kirsch or brandy into the mixture. Allow the mixture to cool at room temperature. In this way the strawberry syrup is ready for the cheesecake.

To make slight variation in taste and flavor, orange juice or corn syrup can also be used with strawberries.

5. Strawberry Sorbet

Take ripe, full-flavored fresh organic strawberries (1 quart), cover with homemade strawberry sauce frozen apple juice concentrate ( ½ cup ) and lemon juice (2 tbsp). Make the puree of all the ingredients in a blender. Freeze the covered contents in a bowl for about 3-4 hours, but take the bowl out from the freezer after every 45 minutes, beat again to make the puree for smooth and consistent freezing. Serve the sorbet after allowing it to rest for 15 minutes at room temperature.

6. Strawberry syrup

Strawberry syrup,made from fresh strawberries, is a good topping for pancakes, waffles, dessert recipes, ice creams, cakes, cheesecakes, French toasts or other breakfast dishes. Some exquisite cocktails and mixed drinks can also be prepared with it.

It is extremely easy to prepare the syrup, because it requires few ingredients. It can be prepared on daily basis or can be preserved in the refrigerator.

To prepare the fresh strawberry syrup at home,take fresh strawberries (4 cups), sugar ( 5 cups) and water( 4 cups).
Wash the strawberries and chop them into fine pieces.Add the sliced strawberries when the sugar gets dissolved in the boiling water. Boil on a medium to lower heat for about 5 minutes. Remove the container off the heat and leave the mixture for 15 minutes so that the strawberries steep in the sugar.Strain the cool mixture and store it in the refrigerator. The strained strawberries can be used as a topping.

7. Strawberry Banana Protein Shake

To prepare healthy and nutritious shake does not mean putting into blender the protein powder, milk, the strawberries and the bananas. Because the strawberries easily get contaminated and the choice of protein also makes the difference.

Take organic strawberries because otherwise they may contain pesticides. Properly wash, clean and slice them. Take small pieces of bananas, juice or milk, whey protein and ice.

The supplements like whey protein, milk protein (casein) and egg protein are all available commercially. But whey is the most effective protein to reduce body weight with maximum fat loss.

Ice only makes the smooth shake without any calories and nutrients while the juice adds up more calories and vitamins.

Blend the above contents till the consistency is achieved.

8. Chocolate Dipped Strawberries

Wash fresh strawberries (25-30 pieces) and dry them so that the chocolate may not seize. Take white chocolate (7 ounce) and melt in microwave and dip the strawberries in it by holding the stem and dry on wax paper. Now melt the dark chocolate ( 8 ounce ) and dip the strawberries in it by leaving white color on the top in a shape of your choice. Drip off excess chocolate again and dry on same paper or in freezer.

9. Strawberry High Energy Protein Shake

Take fresh strawberries (10 fruits),water (10 ounces), flax seed oil (1 tbsp), vanilla extract (1/2 tbsp), protein powder (1 scoop), and ice cubes (3-4 pieces). Mix the contents in a blender and the strawberry high energy protein shake is ready to be served. Flax seed oil in the shake gives extra energy.

10. Strawberry Crumb Pie

Strawberries are packed with carotenoids which boost the immune system and help to decrease the chances of heart disease on one hand and certain types of cancers on the other.

This pie, heaped with strawberries, served hot or cold, either with or without cream, with cinnamon and brown sugar crumb used as toppings is a relishing flavour and a heavenly summer dessert.

Take either hulled or halved fresh strawberries (3 pint), 1/4 cup sugar (1/4 cup), cornstarch (1/4 cup), sifted flour (2 cups), a healthy choice of shortening (trans-fat-free margarine 1/2 cup),water (3 tbsp),brown sugar (1/4 cup), cinnamon (1/2 cup)and light cream (1/2 cup).

Mix the strawberries, cornstarch and sugar and leave it while the pastry is being made. Also mix the salt and flour in a bowl. Now cut the shortening and separately set aside a cup of this mixture. Sprinkle water over remaining contents and beat with fork to make a ball.Now roll the pastry out on a floured surface and trim the edges to make them high.

Put the strawberry mixture in the pastry shell, blend the remaining flour mixture along with cinnamon and brown sugar and cinnamon and then sprinkle the crumbs over the strawberries.

Bake for 45 minutes at 400 F, on aluminum foil to make a brown crust. The pie is ready to be served for 6-8 serves, either cool / hot with / without cream.

11. Strawberry Jam

Take a non-reactive pot and mix the cleaned, halved or chopped strawberries (16 cups) and 2 cups of the organic sugar (2 cups). Leave the mixture at room temperature for about 15 to 30 minutes so that the sugar may drain out the liquid from the strawberries. Thereafter cover the contents and refrigerate overnight for maceration or if in hurry, let it remain as such for an hour.

Remove the strawberries from the fridge. Add organic sugar (4 cups), powdered pectin (8 tbsp) and fresh lemon juice (1/2 cup), or some fruits (as per desire), to it. Put the contents in a pan, stir continuously and boil over high heat for 20 minutes or till it becomes thick and consistent. The pan should be large one, because during boiling the foam may come out of the pan.

Vigorously boil the jam till the bubbles look thick and syrupy or when a spoon is dipped in it and held high the contents do not fall like a liquid, but trickle down like honey. If this happens, stop cooking and remove the pan from the heat and transfer the jam into the jars. Cover the jars and process them in a boiling water bath for 10 minutes and then put them on a cloth for cooling, without touching each other.

During cooling, the jars will create a ping noise and the lids of the jars would be pulled down and become concave due to vacuum, thereby making the jars airtight.Cool the jars for 24 hours. Hold each jar by the edge of the lid and lift an inch or two gently. If the lid holds fast, store the jam in cool dry place for a year, otherwise refrigerate it and use it within 10-15 days.

12. Strawberry Mint Lemonade

The lemonade is sweet and sour, as the lemonades generally are.In lemonnade the strawberry slices get pickled by lemon and sugar and mint provides extra flavour. It is very easy to prepare the strawberry mint lemonade.

Take fresh strawberries and some organic cane sugar or the maple syrup, which easily gets dissolved than the crystals of sugar. Honey as a sweetener has an assertive flavor, but the choice is entirely yours.

Preferably, extract the fresh lemon juice instead of bottled one, but again it is your choice

Mash the sliced strawberries with mint leaves, sugar and little lemon juice in a bowl.

Macerate the mixture for few hours and if possible overnight so that the sugar can drain out the juices from the strawberries. Now add the remaining lemon juice, cold water or ice cubes and sugar to taste and then serve.
