Stuffed Chicken Enchilada Ring
4 oz can mild green chiles
1/3 c sliced black olives
2/3 c shredded colby/jack cheese
1/3 c diced cherry tomatoes
1/2 c mayo
2 cups diced cooked chicken
4 tbps southwest seasoning
half lime squeezed
2 sleeves of crescent rolls
Add all ingredients to a bowl except the chips and mix till blended. Breakup a handful of chips and lay them on the cooking sheet. pic 4. Lay out crescent roll wedges over crushed chips making a ring as shown in pic 5. Spread chicken mixture evenly around the ring as shown in pic 6. Fold pointed ends of dough over mixture and seal, pressing in most of the chips into the top of the dough. Bake at 375 for 15 to 20 minutes or until golden brown. Serve with guacamole, Spanish rice and enjoy!
