Fine Italian Pastry

Whenever you are in doubt what to prepare for breakfast or dinner, and at the same time please your family members, write down this recipe and produce soft, enjoyable pastry. In my area, we call it panzerotti. There are many different recipes but this one has been applied dozens of times and each time it proved its deliciousness. It does not take a professional cook or an expert to make it. Trust your instinct and start your own cooking adventure.

All of the following ingredients you probably have at home as basic food supplies. For the dough, you need: rye flour or any other type of flour you have at home, warm water, salt, sugar, leaven, and for the filling: ketchup or tomato sauce, oregano, ham or salami, bacon and cheese, optionally.

Ingredients

  • 700g of Rye flour
  • 1/2 of leaven
  • 250ml of Warm water
  • 1 teaspoon of salt
  • 1/2 teaspoon of sugar
  • 150g of ham/salami, chopped
  • 150g of bacon, chopped
  • ketchup
  • cheese
  • oregano

From a recipe to a creation

It is recommended to prepare everything before you start making panzerotti. If you chop bacon and ham in advance then you will complete the making process even faster and instead of 40 minutes it can be finished in 30 minutes.


Step 1

In a deep dish pour 250 ml of warm water, 1 teaspoon of salt, 1/2 teaspoon of sugar and leaven (half of the small packet). Mix everything and make dough while adding rye flour while you are blending all of it. About 700g of rye flour should be added but do not pour all of it at once.keep adding it slowly until the mixture becomes integrated and forms dough.

Step 2 - A short break

After you have accomplished it, leave it to rest for 15 minutes in a warm room(kitchen).

Step 3

The next stage is to roll pin the dough until it is 1/2 cm thick. Cut it into squares and stuff them with ketchup, chopped bacon, chopped ham or salami, sprinkle some oregano, put some cheese to give it a distinctive flavour. If you love hot dishes, put some pepper in it. When you finish stuffing the squares, closed them by folding over and be sure to secure them from leaking at sides. If ketchup leaks, it makes it difficult to clean it from the baking pan. Bake it at 150 degrees for about 20 minutes.

Yields: Serves about six people.

Suggestion for serving

The pastry is usually served with yoghurt or tea and you can add some extra cheese or tomato sauce. For those who love hot and spicy dishes, you can put on the dining table some hot red peppers with a glass of red wine.
