Summer fruit vol au vents
There is an important thing to remember about summer berry-type fruit: the darker their colour, the more protective they are against a range of modern diseases, including cancer. So try to include blackcurrants, blackberries, blueberries, black cherries and loganberries in this melt-in-mouth recipe. (Serves 4)
Summer berries: (fresh are better, but frozen work just as well) 225g
Agar agar: one fourth teaspoon
Runny honey: about 2 teaspoon
Small vol au vent cases: (ready-made are fine) 8
Single cream to serve
Put the fruit into a saucepan and add 150ml water / Bring quickly to the boil, add the agar agar, stir in gently but thoroughly and leave to cool slightly / Melt the honey and use it to brush the tops of the vol au vent cases / Spoon in the fruit and leave to cool / Serve drizzled with cream.
These vol au vents make an excellent sweet addition to canapes for a drinks party.
