Chili con carne with beans and corn
Usually chili needs to sit around and cook all day long before it really starts to taste good. This recipe tastes great as soon as the beef is finished cooking.
The ingredients you will need for this recipe are one onion diced, to jalapenos diced with the seeds (or remove the seeds for a less spicy chili), two cloves of garlic minced, one tablespoon of vegetable oil, one tablespoon of cumin, one pound ground beef, one 8 oz can of crushed tomatoes, one 8 oz can of corn, one 8 oz corn of black beans, one 8 oz can of red beans, and salt to taste.
Start heating the vegetable oil over medium to medium high heat. Add your onion, jalapeno, garlic and cumin. Stir ingredients and cook until the onions are soft. Add the ground beef and all the canned vegetables. Use a mixing spoon to break up the ground beef and simmer until it is finished cooking. Add salt to taste.
This chili tastes great with melted cheddar. Also try serving it over scrambled eggs with a biscuit for what I call a "Cowboy Breakfast"
