Roast Beef, Gravy, Garlic Mashed Potatoes, Dumplings, and Yam and Carrots

Preheat oven to 400 degrees . Mix together the following: 2 tbsps of mustard, 2 Tbsps of soya sauce, 2 tsp sugar, 1 tbsp paprika, 1 tsp montreal steak spice, 1/4 water, 1/4 cup of pickle juice, 4 garlic cloves, 1 loosely chopped onion, 1 tsp parsley, 1 tbsp of melted bacon grease, 1 tbsp olive oil. Pour over roast beef and cover and bake for 1/2 hour then turn it down to 325 degrees. Half way through open and baste and then bake. For a 4 pound roast 2 hours and 15 minutes.

While that is cooking peel potatoes and 4 or 5 garlic cloves, 1 tsp of salt and 2 tbsp of olive oil. Put in a pot with water to cover and boil.

Next peel one and cut into pieces and take roughly the same amount of carrots and peel and chop. Put together into a pot with 1/2 tsp of salt and cover with water and boil.

When roast is ready it should rest on the counter for about 1/2 hour. Put it on a plate and cover and set it on the counter. Leave the oven on, actually put it up to 400 for the dumplings.

Take the roasting pan with all the drippings and place it on the element. Drain potatoes into the roasting pan and the water from the yam and carrot mixture as well. Set potatoes and carrot/yam mixture aside. Mix about a 1/4 cup or a bit more of flour with cold water, mix until all the lumps are out. Heat drippings and stir in the flour mixture. Add one beef or chicken boulion cube and some flour in the mixture with black pepper and some cayenne pepper with 1 tbsp of bacon grease. This makes an awesome gravy!

Put almost all the mixture into a gravy bowl. Leave the bottom covered with gravy and mix dumpling mix. 1 and 1/2 cup of flour with 2 tsp of baking power and 1/2 tsp salt with 1 tbsp of sugar, 12 tsp of thyme, mix and set aside. Have a bowl for liquid - 1/4 cup of gravy, 1 egg, 1/4 cup of water , 2 tbsp oil or butter, mix together and then add slowly to dry. You can add more flour or water if needed. Mix and put in a ball form and place into the gravy roast pan, cover and bake at 400, usually these are ready in 15 minutes. They are spongy and really good.

While that is cooking, mash potatoes add some butter and cream and 1 tsp of parsley. For the carrot and yam mixture, mash and add some butter with 2 tsp of sugar and a pinch of nutmeg. These are delicious!
