Spectacular Holiday Side-Dishes
For as long as I can remember, Thankgiving and Christmas dinners at my grandmothers were the same every year. Turkey, dressing, ham, mashed potatoes, green beans, broccoli casserole, rolls, frozen cranberry salad, and sweet potato delight. There was one year she tried candid yams, and belive me it just wasn't the same. We liked her holiday meals so well that I think we looked forward to specific dishes. Here are the dishes that I can't do without on the holidays.They are very easy. I am not a cook, but I have fixed them without any problems on Thanksgiving many times. I hope you'll try them. Sweet Potato Delight
3 cups sweet potatoes (I use canned)
2 eggs
1 cup sugar
1/2 cup margarine
1/2 cup milk
1 tsp vanilla
Mix ingredients until smooth, then pour into a 7.5 x 11 inch baking dish and set aside.
Topping
1 cup flour
1/2 cup margarine
1 cup brown sugar
1 cup chopped pecans
Mix ingredients well and pour over sweet potato mixture. Bake 350 degrees for about 30 - 35 minutes.
Broccoli Casserole
10 oz. broccoli frozen chopped (cook and drain)
1 onion chopped
1/4 cup butter
1 cup shredded cheddar cheese
1 can cream of mushroom soup
1/4 cup mayonnaise
salt, pepper
1 tbsp melted butter
1/2 cup ritz crackers
Saute' onion in butter and add to cooked broccoli. Add cheddar cheese, mushroom soup, mayonnaise, salt, pepper and blend well. Pour mixture into casserole dish. Combine melted butter with crushed Ritz crackers and sprinkle on top. Bake at 350 degrees for 20 - 25 minutes.
Frozen Cranberry Salad
4 3oz packages of creamcheese (let soften)
2 16oz cans whole berry cranberry sauce
1 cup cranberries frozen
2 cups walnuts
2 20oz cans crushed pineapple
1 16oz carton frozen whipped topping thawed
2 tbs sugar
In a large bowl, combine the cheese, cream, and sugar and set aside. In another large bowl combine the nuts, cranberry sauce, pineapple, and cranberries. Now put the cream cheese mixture in and blend. Pour into a 13in x 9in baking dish. Cover and freeze. Remove from freezer before serving.
