For Your Sweet Potato Pancakes You Will Need.
1. 3 Cups All Purpose Plain Flour.
2. 2 Teaspoons Ground Sea Salt.
3. 3 Teaspoons Baking Powder.
4. 1 Teaspoon Fresh Ground Nutmeg.
5. 2 1/2 Cups Whole Milk.
6. 1/2 Cup Vegetable Oil.
7. 4 Large Eggs.
8. 2 Tablespoons Granulated Sugar.
9. 2 Tablespoons Vanilla Extract.
10. 4 Cups Peeled Finely Grated Sweet Potato.
11. 2 Tablespoons Real Butter , for frying your sweet potatoes.
You will want to start by mixing all your ingredients together well except for the sweet potatoes. Add a couple of tablespoons of real butter to a large skillet and then add your grated sweet potatoes to the skillet and stir fry until brown and allow to cool before you add them to your bowl where you have mixed your other ingredients. Mix your cooked grated sweet potatoes into the bowl very well.
You want to fry your potato pancakes on one side until you see bubbles all over the top of the cooking pancakes and then flip them over to continue cooking your sweet potato pancakes.Do not mash down or flatten your pancakes with the spatula. Let your pancakes stay fluffy.
Once you have your sweet potato pancakes cooked serve them with plenty of margarine or butter and heated pancake syrup. And yes you have now improved on pancakes. You want to make sure that you peel and grate your sweet potatoes up fine. And when you fry them in the butter you want them to brown.
